Life events can sometimes be valuable teaching moments. Sometimes they are there to offer up reminders, or reacquaint you with some base level skills. This was one of these occasions.

First lesson: always line the pan.

Second lesson: when it says cool in the pan for 10 minutes, maybe do that.

Third lesson: if you try to remove slice from pan without completing these first two steps, you'll be faced with warm slice peeling off a tin in slabs down into a sink of oblivion while your significant other doesn't know whether to laugh, shake their head in embarrassment, or consider trading you in for a smarter model. Not great.

Not to be deterred! Once you've mastered those basics (or overcome your boneheadedness), this is super easy to make. In fact, this is slice-making 101 - mix up your wet ingredients, throw the dry ones in a bowl, give it stir, give it a bake, slather the top with icing and you're done! You should end up with a rich and super-chocolatey treat with a sumptuous soft centre.

Ingredients

  • 120 grams butter
  • 3/4 cup brown sugar
  • 2 teaspoons golden syrup
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 cup self-raising flour
  • 2 tablespoons cocoa
  • 1/2 cup dessicated coconut
  • 1/4 teaspoon salt

Chocolate icing

  • 2 cups icing sugar
  • 2 tablespoons cocoa
  • 1 teaspoon vanilla extract
  • 30 grams butter, melted
  • 3 tablespoons hot water

Directions

  1. Heat oven to 180 degrees Celsius/360 degrees Fahrenheit. Lightly grease a 20 x 30cm baking tin. Line base and sides with baking paper, extending the paper 2cm above the edge for easy removal later.
  2. Melt butter in a small pan over low heat. Allow to cool slightly, then stir in the brown sugar.
  3. Crack the egg into the pan, then beat to combine. Add golden syrup, vanilla and milk, mixing well with a wooden spoon.
  4. Sift flour and cocoa into a large bowl, mix in coconut and salt. Add the butter mixture to the dry ingredients. Stir until well combined.
  5. Spread the mixture evenly into the prepared baking tin. Smooth over top, then bake for 15 minutes or until a toothpick comes out clean when inserted into centre of slice. Remove and immediately ice with chocolate icing.
  6. For the icing, sift icing sugar and cocoa into a small bowl, add melted butter, vanilla and hot water, then mix until smooth and glossy. Spread over slice and sprinkle a handful of coconut over the icing. Leave to cool in the tin, then cut into slices.
