Situated somewhere between a glaze and a frosting, the fresh lemon and orange juices in this citrus icing give a sweetness and zing to any cake that might need a little extra pep in its step.

Aside from sifting icing sugar, which is never the world's fastest or mind-engaging task, this will come together super quickly, and doesn't take long to set. Mixing the zest in with the butter infuses its oils through the mixture while the butter will also help the icing develop a crunchier crust.

Ingredients

  • 2 teaspoons butter
  • 1 teaspoon orange zest, grated
  • 1 teaspoon lemon zest, grated
  • 1 cup icing sugar, sifted
  • 1 tablespoon lemon juice, plus 1 tablespoon extra if needed
  • 2 tablespoons orange juice

Directions

  1. Leave the butter to warm to room temperature and cut into cubes.
  2. In a small bowl, add the orange and lemon zest to the butter and beat until smooth.
  3. Gradually stir in the icing sugar and lemon and orange juices to make a smooth paste that is easy to spread. Whisk in up to 1 tablespoon more lemon juice, 1 teaspoon at a time, until your desired consistency is reached.
  4. Spread the icing over your cake or cupcake with a small spatula and let stand for at least 10 mins before serving.
