How good are dates? On their own they're like the boss of dried fruit - rich and robust enough that you have to consider each one singularly... you're not going to pick up a handful and wolf them down. When they're simmered down into a gloopy mess and added to a baked treat, then they're damn near magical. Their taste becomes even more concentrated and establishes a chewy bassline that will anchor whatever melody the rest of your ingredients will perform.

The sticky sweetness of the dates works perfectly within a fudgy chocolate slice - you'll get the flavour profile but not the heaviness of caramel - and the fruit woven through the chocolate should offset the denseness of the crumb.

Top it all off with a crackly chocolate crust and you've got a decadent treat that's super simple to make and just as easy to treat yourself with a second slice.

Ingredients

  • 1/2 cup pitted dates, chopped
  • 1 cup water or black tea
  • 125 grams butter
  • 1 cup brown sugar
  • 2 tablespoons cocoa
  • 2 tablespoons golden syrup
  • 1 egg
  • 1 cup self-raising flour
  • 1/2 cup pecans, chopped
  • 1 teaspoon lemon rind
  • 60 grams dark chocolate

Directions

  1. Heat oven to 180 degrees Celsius/360 degrees Fahrenheit. Lightly grease a 20 x 30cm baking tin. Line base and sides with baking paper, extending the paper 2cm above the edge for easy removal later.
  2. Cut the dates into medium-sized pieces (each date should be cut into 3 or 4 pieces), and place them into a bowl and cover with hot water or tea. Leave the dates to soak while you make the base.
  3. Combine the butter, brown sugar, cocoa and golden syrup in a small pan. Stir on low heat until butter has melted and sugar has dissolved. Remove from heat and cool slightly, then whisk in the egg, beating well.
  4. Sift the flour into a large bowl. Stir through dates, nuts and lemon rind. Make a well in the centre of the dry ingredients, add butter/sugar mixture and stir until well combined.
  5. Spoon the batter into the prepared pan, press to the edges and smooth the top. Gently tap the pan on the counter to settle the mixture. Bake for 20 minutes or a toothpick or skewer comes out clean when inserted into centre of slice. Remove from the oven and allow to cool in the tin before icing.
  6. In a glass bowl, add in the chopped chocolate pieces. Set the bowl over a saucepan with a few centimetres of simmering water, making sure the bottom of the bowl doesn’t touch the water. Allow the steam to melt the chocolate, stirring occasionally. Once the chocolate is fully melted, pour it over the slice, sprinkle with some flaky salt and allow to cool until the chocolate is fully set.
