Sometimes in life, you just want to go basic. You want to enjoy for something for its innate simplicity and savour the small joys that comes from subtle pleasures. As it goes in life, so it goes in treats, and these orange cookies definitely fit the profile of a no-fuss charmer.

They may appear modest and unassuming, but there's a lightness and freshness from the infusion of citrus that elevates it above your run-of-the-mill cookie. The cardamom adds an extra layer of complexity to the flavour profile, but if you can't get your hands on it, there's enough orange to go around for a tasty and more-ish bite.

Ingredients

  • 125 grams butter, cubed
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • Grated zest and juice of 1/2 orange
  • 1 egg plus 1 egg yolk
  • 2 teaspoons ground cardamom
  • 2 cups plain flour
  • 1 teaspoon baking powder

Directions

  1. Heat oven to 180 degrees Celsius/360 degrees Fahrenheit and line two oven trays with baking paper. Leave the butter to warm to room temperature and cut into cubes.
  2. Cream sugar, butter and orange zest in a bowl with an electric mixer until light and fluffy. Crack the egg into the bowl then add the egg yolk, beating well after each addition. Add the juice and cardamom and mix until well combined.
  3. Sift in half the flour and baking powder and salt, mix until just combined then sift in the remaining flour and combine with a wooden spoon or spatula. Mix until most of the flour is incorporated, then using your hands gently bring the dough together into a smooth, soft and pliable ball.
  4. Take about 2 tablespoons of the mixture, and use lightly floured hands to roll into balls. Place on prepared trays, about 2 fingers apart, as they will flatten as they cook.
  5. Bake for about 15-20 minutes or until golden around the edges. Remove from oven and leave on the baking tray for about 10 minutes and then transfer to a wire rack to cool completely.
